Banoffee Cakelets

There’s nothing that brings me more joy than spending hours in the kitchen, whipping up delicious things for the people I love.

Every now and then there comes a time when you need to whip up a dessert, the type that will wow your guests, but there’s just no time.

These banoffee Cakelets are the way to go, the certainly are a crowd pleaser, they take minutes to make and well they pretty because that’s kind of important too…

 Ingredients:

A store bought Vanilla Sponge cake (homemade if you have time;)

Fresh ripe bananas

Fresh cream

Caramel Sauce

Method:

Using a round cookie cutter, cut an even number of cake discs.

Whip up the cream just until it begins holds its shape. Thinly slice the bananas and drizzle with a squeeze of lemon juice just to stop them browning.

Put the first layer of sponge discs on you serving plate. Layer some banana slices on each cake disc and top them with a dollop of cream, drizzle with some gooey caramel and add you top layer of sponge.

Decorate the top with the remaining cream and caramel.

Serve and enjoy.
