Peppermint Crisp Sundae

Is there anything that brings more joy then ice-cream?

There might just be one small thing that could beat it, and that’s a dessert the comes together in minutes.

This peppermint crisp sundae is a spin off on a South African classic, the peppermint crisp tart. Its the kind of dessert that puts you in a sugar coma for days but its worth every mouthful.

This sundae version is just as good and somehow the chill of the ice-cream with the crisp coolness of peppermint is a match I could get used to.

SUNDAE

INGREDIENTS:

Vanilla Ice Cream

Tennis Biscuits

A tin of Caramel Treat

Peppermint Crisp Chocolate bar

Chocolate Sauce (optional)

A quirky glass jar

METHOD:

Let your ice-cream sit for a couple of minutes until it’s slightly soft, this will make it easier to work with.

While the ice cream is softening, roughly crush some tennis biscuits and set aside in a bowl.  Crush or grate your peppermint crisp bar too.

Mix the caramel treat until it forms a deliciously smooth texture.

Now the fun begins, time to assemble.

Layer your ingredients in a jar. Start with the ice-cream try to level to top a touch then sprinkle over some of the tennis biscuits until the ice-cream is completely covered. Top the crushed biscuits with a generous helping of caramel treat. Cover the caramel with a layer of crushed peppermint.

 

Repeat these steps until the jar is full. Pop the sundae back into the freezer for 5 to 10 minutes, depending how long you able to wait 😉
