I was asked to make a 45th (sapphire) anniversary cake for a Canadian couple visiting their family in South Africa. At first this seemed somewhat daunting, trying to tie sapphire blue with a protea to represent South Africa and a Canadian maple leaf. But challenges are what make decorating cakes most exciting!
Ombre seemed the best bet, thus breaking solid sapphire blue and tying in what Durban is known for clear blue skies and beautiful beaches. This tied in really well with the protea giving it that S. A stamp!
Perfect for a summer holiday in Durban, the heat city.
The inside consisted of layers of vanilla bean and lemon sponge soaked with vanilla bean syrup and limoncello to give it a little kick, it was then generously layered with lashings of white chocolate swiss meringue buttercream and homemade lemon curd.
We also incororated cupcakes spelling out “Happy Anniversary”, Each cupcake was also filled with that delicious lemon curd and white chocolate swiss meringue
